 Sweet & Spicy Vegetable Hong Kong Style

INGREDIENTS

Dry red chili - 10

Water - 150 milliliters

Garlic cloves - 4

Oil - 20 milliliters

Salt - 1/2 teaspoon

Black salt - 1/2 teaspoon

Ketchup - 60 grams

Red chili sauce - 20 grams

Soy sauce - 20 milliliters

Vinegar - 10 milliliters

Powdered brown sugar - 1 tablespoon

Prepared red chili paste - 2 tablespoons

All purpose flour - 70 grams

Corn flour - 30 grams

Garlic - 1 teaspoon

Ginger - 1 teaspoon

Salt - 1 teaspoon

Black pepper - 1 teaspoon

Water - 200 milliliters

Tofu - 500 grams

Oil - for frying

Oil - 35 milliliters

Ginger - 1 tablespoon

Garlic - 1 tablespoon

Dry red chili - 3

Carrots - 100 grams

Green beans - 100 grams

Bell pepper - 220 grams

Salt - 1/4 teaspoon

Black pepper - 1/4 teaspoon

Vegetable stock - 100 milliliters

Corn flour - 10 grams

Water - 40 milliliters

PREPARATION

1. In a bowl, add 10 dry red chili, 150 milliliters water and soak for 2 hours.

2. In a blender, add the soaked dry red chili, 4 garlic cloves, 20 milliliters oil, 1/2 teaspoon salt, 1/2 teaspoon black salt and blend it into a paste.

3. In a another bowl, add 60 grams ketchup, 20 grams red chili sauce, 20 milliliters soy sauce, 10 milliliters vinegar, 1 tablespoon powdered brown sugar, 2 tablespoons prepared red chili paste and mix it well.

4. In a mixing bowl, add 70 grams all purpose flour, 30 grams corn flour, 1 teaspoon garlic, 1 teaspoon ginger, 1 teaspoon salt, 1 teaspoon black pepper, 200 milliliters water and mix it well to make a thick batter.

5. Add 500 grams tofu and mix it well.

6. Heat sufficient oil in a heavy skillet and deep fry these until golden brown and crispy.

7. Drain it on an absorbent paper.

8. Heat 35 milliliters oil in a heavy skillet, add 1 tablespoon ginger, 1 tablespoon garlic, 3 dry red chili and stir for 1 - 2 minutes.

9. Then, add 100 grams carrots, 100 grams green beans, 220 grams bell pepper and mix it well.

10. Cook for 8 - 10 minutes on medium heat.

11. Add the prepared sauce in it and mix it well.

12. Add 1/4 teaspoon salt, 1/4 teaspoon black pepper, 100 milliliters vegetable stock and mix it well.

13. In a bowl, add 10 grams corn flour, 40 milliliters water and mix it well.

14. Pour the batter into the skillet and mix it well.

15. Bring it to a boil.

16. Now, add the fried tofu and mix it well.

17. Cook for 5 - 7 minutes on medium heat.

18. Remove it from heat.

19. Serve hot.
