Tawa Naan Burger

INGRDIENTS
All purpose flour - 250 grams
Salt - 1/2 teaspoon
Baking soda - 1/4 teaspoon
Oil - 1 tablespoon
Curd 120 grams
Water - 50 milliliters
Oil - 2 tablespoons
Ginger - 1 teaspoon
Green chili - 1 teaspoon
Green beans - 30 grams
Carrot - 30 grams
Bell pepper - 30 grams
Green peas - 30 grams
Salt - 1/2 teaspoon
Black pepper - 1/4 teaspoon
Turmeric - 1/4 teaspoon
Red chili - 1/2 teaspoon
Dry mango powder - 1/2 teaspoon
Coriander powder - 1/2 teaspoon
Boiled mashed potatoes - 350 grams
Coriander - 2 tablespoons
All purpose flour - 80 grams
Corn flour - 30 grams
Salt - 1/4 teapsoon
Black pepper - 1/4 teaspoon
Water - 150 milliliters
Bread crumbs - for coating
Oil - for frying
Mayonnaise - 150 grams
Onions - 20 grams
Cucumber - 20 grams
Cabbage - 20 grams
Salt - 1/2 teaspoon
Black pepper - 1/8 teaspoon
Oil - for brushing
( For assembling )
Lettuce
Prepared mixture
Purple cabbage
Onion slices
Tomato slices
Cheese slice
Ketchup
PREPARATION
- In a mixing bowl, add 250 grams all purpose flour, 1/2 teaspoon salt, 1/4 teaspoon baking soda, 1 tablespoon oil, 120 grams curd and mix it.
- Now add 50 milliliters water and knead it to make a smooth dough.
- Keep aside and rest for 1 hour.
- Heat 2 tablespoons oil n a heavy skillet, 1 teaspoon ginger 1 teaspoon green chili, stir well.
- Now add,30 grams green beans, 30 grams carrot, 30 grams bell pepper, 30 grams green peas and give it a stir.
- Add 1/2 teaspoon salt, 1/4 black pepper, 1/4 teaspoon turmeric, 1/2 teaspoon red chili, 1/2 teaspoon dry mango powder, 1/2 coriander powder and mix well.
- Now , add 350 grams boiled mashed potatoes and mix all ingredients properly.
- Then, add 2 tablespoon chopped coriander, mix once.
- Remove it from heat.
- In a another bowl, add 80 grams all purpose flour, 30 grams corn flour, 1/4 teaspoon salt,1/4 teapsoon black pepper, 150 milliliters water and whisk it to remove all lumps.
- Now take a portion from potato mixture on your hand and shape in into flat circle shape.
- Dip it into the prepared mixture and coat in into bread crumbs all over.
- Now in a heated oil, deep fry them until brown and crispy from both sides.
- In small bowl, add 150 grams mayonnaise, 20 grams onion, 20 grams cucumber, 20 grams cabbage , 1/2 salt, 1/8 teaspoon black pepper and mix well.
- Dust some flour on the flat surface, add a ball from dough and roll it to small circle using a rolling pin.
- Place it on the hot tawa, brush some oil to both sides and cook until brown.
- For assembling , place naan on the flat surface, top it with lettuce, prepared mayonnaise mixture, purple cabbage, fried tikki ,onion slices, tomato slices and cheese slice
- Apply some ketchup over the other naan and cover the top half of the burger.
- Serve immediately.
