Zingy Parcel

Servings - 2 - 3

INGREDIENTS

(For Dough)

Dry yeast - 1 tablespoon

Sugar - 2 tablespoons

Warm water - 220 milliliters

All purpose flour - 460 grams

Salt - 2 teaspoons

Oil - 60 milliliters

(For Stuffing)

Paneer - 240 grams

Salt - 1/2 teaspoon

Turmeric - 1 teaspoon

Cumin powder - 1 teaspoon

Coriander powder - 1 teaspoon

Chilli flakes - 1/2 teaspoon

Mayonnaise - 2 tablespoons

Harisa mayonnaise - 2 tablespoons

Maize flour - for dusting

Butter - for brushing

Oregano - for garnishing

Mixed herbs - for garnishing

PREPARATION

(For Dough)

1. In a mixing bowl, add 1 tablespoon dry yeast, 2 tablespoons sugar, 220 milliliters warm water and mix it well.

2. Rest the mixture for 5 minutes.

3. Add 460 grams all purpose flour, 2 teaspoons salt, 60 milliliters oil and knead it into a smooth soft dough.

4. Rest the dough for 2 - 3 hours.

(For Stuffing)

1. In a mixing bowl, add all the ingredients and mix it well.

2. Marinate the paneer mixture for 1 hour.

(Rest of the Preparation)

1. Dust the floor with maize flour.

2. Take a ball from dough and flatten it with help of a rolling pin.

3. Fold the dough sides like triangle. (See Video)

4. Put some mixture on the top and close the all sides. (See Video)

5. Place it on a baking tray and brush it with butter.

6. Sprinkle oregano and mixed herbs on top of it.

7. Preheat the oven to 220°C/430°F. Bake for 15 - 20 minutes or until the top is golden brown in color.

8. Serve hot.

Deep Fried Mini Calzones

Servings - 2 - 3

INGREDIENTS

Dry yeast - 1 1/2 teaspoons

Sugar - 2 teaspoons

Warm water - 315 milliliters

All purpose flour - 465 grams

Parmesan cheese - 50 grams

Baking powder - 1 teaspoon

Salt - 1 teaspoon

Olive oil - 45 milliliters

Ketchup - to taste

Mozzarella cheese - to taste

Basil - to taste

Salt - to taste

Oil - for frying

PREPARATION

1. In a mixing bowl, add 1 1/2 teaspoons dry yeast, 2 teaspoons sugar, 315 milliliters warm water and mix it well.

2. Rest the mixture for 5 minutes.

3. Add 465 grams all purpose flour, 50 grams parmesan cheese, 1 teaspoon baking powder, 1 teaspoon salt, 45 milliliters olive oil and knead it into a smooth soft dough.

4. Rest the dough for 1 hour.

5. Tuck the dough well.

6. Flour the surface and place the dough on it.

7. Take a ball from dough.

8. Flatten the dough with the help of your fingers.

9. Spread ketchup on it.

10. Sprinkle mozzarella cheese, basil and salt on top of it.

11. Fold the dough over the fillings and seal. Pinch the edge of the dough together and fold back.

12. Heat sufficient oil in a heavy skillet and deep fry these till golden brown and crispy.

13. Drain it on an absorbent paper.

14. Cut it into half.

15. Serve hot with ketchup.
