 Methi Pakora

Servings - 2 - 3

INGREDIENTS
Fenugreek leaves - 100 grams
Gram flour - 250 grams
Green chili - 2 teaspoons
Ginger - 2 teaspoons
Asafoetida - 1/4 teaspoon
Red chili - 1 teaspoon
Baking soda - 1/4 teaspoon
Turmeric - 1/2 teaspoon
Salt - 1 teaspoon
Water - 220 milliliters 
Oil - for frying

PREPARATION
1. In a mixing bowl, add all the ingredients and mix it well to make a thick batter.
2. Heat sufficient oil in a heavy skillet and take a spoonful of batter and drop it into the hot.
3. Deep fry these till golden brown and crispy. Drain it on an absorbent paper. 
4. Serve hot with ketchup.

Chinese Pakora

Servings - 3 - 4

INGREDIENTS 
Ketchup - 2 tablespoons
Chilli garlic sauce - 1 tablespoon
Soy sauce - 1 teaspoon
Vinegar -1 teaspoon
Cabbage - 100 grams
Spring onions - 60 grams
Ginger garlic paste - 1 tablespoon
Coriander - 10 grams
Soy sauce - 1 teaspoon
Vinegar - 1/2 teaspoon
Corn starch - 25 grams
All purpose flour - 6 tablespoons
Salt -1 teaspoon
Black pepper - 1 teaspoon

PREPARATION
1. In a mixing bowl add 2 tablespoons ketchup, 1 tablespoon chilli garlic sauce, 1 teaspoon soy sauce, 1 teaspoon vinegar and mix well.
2. In a another mixing bowl add 100 grams cabbage, 60 grams spring onions, 1 tablespoon ginger garlic paste, 10 grams coriander, 1 teaspoon soy sauce, 1/2 teaspoon vinegar, 25 grams corn starch, 6 tablespoons all purpose flour, 1 teaspoon salt, and mix well. Rest 10 minutes.
3. Now add 1 teaspoon black pepper and mix well.
4. Take a small portion of the mixture and make a small balls.
5. Heat sufficient oil in a heavy skillet and deep fry this till golden brown. Drain it on an absorbent paper.
6. Serve. 

Crispy Onion Pakora

Servings - 2 - 3

INGREDIENTS
Onions - 320 grams
Salt - 2 teaspoons
Gram flour - 160 grams
Green chili - 1 tablespoon
Coriander -2 tablespoons
Red chili - 2 teaspoons
Garam masala - 1 teaspoon
Turmeric - 1 teaspoon
Coriander powder - 1 teaspoon
Chaat masala - 2 teaspoons
Water - 100 milliliters

PREPARATION
1. In a mixing bowl, add 320 grams onions, 2 teaspoons salt and mix well.
2. Rest 10 minutes.
3. Add 160 grams gram flour, 1 tablespoon green chili, 2 tablespoons coriander, 2 teaspoons red chili, 1 teaspoon garam masala, 1 teaspoon turmeric, 1 teaspoon coriander powder, 2 teaspoons chaat masala and mix it well to combine.
4. Add 100 milliliters water and mix well.
5. Heat sufficient oil in a heavy skillet. Deep fry these till they are brown and crispy. Drain it on an absorbent paper.
6. Serve hot with ketchup.

Crunchy Corn Pakora

Servings - 3 - 4

INGREDIENTS
Sweet corn - 350 grams
Onions - 100 grams
Green chilli - 2
Cumin seeds - 1/2 teaspoon
Garam flour - 50 grams
Rice flour - 50 grams
Garam masala - 1/2 teaspoon
Red chili powder - 1/2 teaspoon
Ginger garlic paste - 1 teaspoon
Salt - 1 teaspoon
Turmeric -1/4 teaspoon
Coriander leaves - 1 teaspoon

PREPARATION
1. Add 350 grams sweet corn into a blender and blent it until smooth.
2. Transfer it into a mixing bowl, add 100 grams onions, 2 green chilli, 1/2 teaspoon cumin seeds, 50 grams gram flour, 50 grams rice flour, 1/2 teaspoon garam masala, 1/2 teaspoon red chili powder, 1 teaspoon ginger garlic paste, 1 teaspoon salt, 1/4 teaspoon turmeric, 1 teaspoon coriander leaves and mix well to combine.
3. Heat sufficient oil in a heavy skillet. Deep fry until crispy and golden brown. Drain it on an absorbent paper.
4. Serve.
