Lettuce Paneer Salad In Sesame Dressing

Servings - 2 - 3

INGREDIENTS
(For Sesame Dressing)
Olive oil - 30 milliliters
Lemon juice - 2 tablespoons
Onions - 30 grams
Salt - 3/4 teaspoon
Sesame seeds - 2 tablespoons
Garlic - 1 teaspoon

(For Paneer Salad)
Paneer - 500 grams
Garlic - 1 teaspoon
Salt - 1 teaspoon
Black pepper - 1 teaspoon
Olive oil - 25 milliliters
Lettuce - 300 grams
Tomato - 100 grams
Bell pepper - 320 grams

PREPARATION
(For Sesame Dressing)
1. In a bowl, add 30 milliliters olive oil, 2 tablespoons lemon juice, 30 grams onions, 3/4 teaspoons alt, 2 tablespoons sesame seeds and mix it well.

(For Paneer Salad)
1. In a mixing bowl, add 500 grams paneer, 1 teaspoon garlic, 1 teaspoon salt, 1 teaspoon black pepper, 25 milliliters olive oil and mix it well.
2. Marinate for 30 minutes.
3. Take a skillet, add the marinated paneer and mix it well.
4. Cook for 5 - 7 minutes on medium heat.
5. Remove it from heat and keep aside.
6. In a mixing bowl, add 300 grams lettuce, cooked paneer, 100 grams tomato, 320 grams bell pepper, prepared dressing and mix it well.
7. Serve.

Indian Chickpea Salad

Servings - 2 - 3

INGREDIENTS
Chickpeas - 500 grams
Water - 1600 milliliters, divided
Yogurt - 250 grams
Olive oil - 20 milliliters
Lemon juice - 1 tablespoon
Curry powder - 1 1/2 teaspoons
Garlic - 1 teaspoon
Salt - 3/4 teaspoon
Black pepper - 1/2 teaspoon
Coriander - 8 grams
Onions - 70 grams
Carrot - 80 grams
Cherry tomato - 150 grams
Bell pepper - 160 grams
Lettuce - 100 grams
Raisins - 65 grams

PREPARATION
1. In a bowl, add 500 grams chickpeas, 800 milliliters water and soak for overnight.
2. Take a pressure cooker, add soaked chickpeas, 800 milliliters water and cover it with lid.
3. Cook till you hear 2 - 3 whistles.
4. Remove it from heat and keep aside.
5. In a mixing bowl, add 250 grams yogurt, 20 milliliters olive oil, 1 tablespoon lemon juice, 1 1/2 teaspoons curry powder, 1 teaspoon garlic, 3/4 teaspoon salt, 1/2 teaspoon black pepper, 8 grams coriander and mix it well.
6. In a another mixing bowl, add boiled chickpeas, 70 grams onions, 80 grams carrot, 150 grams cherry tomato, 160 grams bell pepper, 100 grams lettuce, 65 grams raisins , prepared yogurt mixture and mix all the ingredients well.
7. Serve.
