Vegetarian Flautas

INGREDIENTS
Chickpeas - 350 grams
Water - 700 milliliters
Water - 1 litre
Salt - 1/2 teaspoon
Bell pepper - 145 grams
Spring onions - 50 grams
Coriander - 10 grams
Salt - 1 teaspoon
Onion powder - 1 teaspoon
Lemon juice - 2 tablespoons
Mayonnaise - 120 grams
Tortillas
PREPARATION
- In a bowl, add 350 grams chickpeas, 700 milliliters water and soak for overnight.
- Take a pressure cooker, add the soaked chickpeas, 1 litre water, 1/2 teaspoon salt and mix ti well.
- Cover it with lid and cook until you hear 4 - 5 whistles.
- Open the lid and remove it from heat.
- Drain the chickpeas and transfer this into a bowl.
- Mash the chickpeas with the help of a food masher.
- Add 145 grams bell pepper, 50 grams spring onions, 10 grams coriander, 1 teaspoon salt, 1 teaspoon onion powder, 2 tablespoons lemon juice, 120 grams mayonnaise and mix it well.
- Take a tortilla and add the prepared chickpeas mixture on it.
- Fold it tightly.
- Place it on a baking tray.
- Preheat the oven to 350°F/180°C. Bake for 10 - 12 minutes.
- Serve hot with ketchup.
