Hot & Sour Soup
Servings - 3
INGREDIENTS
Oil - 2 tablespoons
Garlic - 1 tablespoon
Ginger - 1 tablespoon
Spring onions - 20 grams
Green chili - 2 teaspoons
Green beans - 40 grams
Carrots - 40 grams
Bell pepper - 40 grams
Cabbage - 40 grams
Salt - 1/2 teaspoon
Black pepper - 1/2 teaspoon
Powdered sugar - 1 teaspoon
Water - 700 milliliters
Soy sauce - 1 tablespoon
Vinegar - 1 1/2 tablespoons
Red chili sauce - 1 tablespoon
Corn flour - 2 tablespoons
Water - 40 milliliters
Spring onions - for garnishing
PREPARATION
1. Heat 2 tablespoons oil in a heavy skillet, add 1 tablespoon garlic, 1 tablespoon ginger and stir for 1 - 2 minutes.
2. Add 20 grams spring onions, 2 teaspoons green chili and mix it well.
3. Cook for 2 - 3 minutes on medium heat.
4. Then, add 40 grams green beans, 40 gram carrots, 40 gram bell pepper, 40 grams cabbage and mix it well.
5. Cook for 5 - 7 minutes on medium heat.
6. Add 1/2 teaspoon salt, 1/2 teaspoon black pepper, 1 teaspoon powdered sugar and mix it well.
7. Now, add 700 milliliters water and mix it well.
8. Bring it to a boil. Add 1 tablespoon soy sauce, 1 1/2 tablespoons vinegar, 1 tablespoon red chili sauce and mix it well.
9. In a bowl, add 2 tablespoons corn flour, 40 milliliters water and mix it well.
10. Pour the mixture into the soup and mix it well.
11. Cook for 5 - 7 minutes on medium heat. Remove it from heat.
12. Garnish with spring onions.
13. Serve hot.
