Soya Chukauni

Servings - 4

INGREDIENTS
Water - 500 milliliters
Salt - 1/2 teaspoon
Soya chunks - 80 grams 
Oil - 1 tablespoon
Red chili - 1/2 teaspoon
Turmeric - 1/2 teaspoon
Coriander powder - 1/2 teaspoon
Ginger garlic paste - 1 teaspoon
Onions - 100 grams 
Green Chili - 1 tablespoon
Curd - 200 grams 
Salt - 1/4 teaspoon
Garlic - 1 teaspoon
Oil - 1 tablespoon
Red chili - 1/2 teaspoon
Turmeric - 1/8 teaspoon
Dry fenugreek leaves - 1 teaspoon
Dry fenugreek leaves - 1 teaspoon

PREPARATION
1. Bring 500 milliliters of water to a boil in a pan. Add 1/2 teaspoon salt and 80 grams soya chunks. Boil for 2 - 3 minutes.
2. Remove from heat, drain the soya chunks, and keep aside.
3. Heat 1 tablespoon oil in pan, add 1/2 teaspoon red chili, 1/2 teaspoon turmeric, 1/2 teaspoon coriander powder, and 1 teaspoon ginger garlic paste. Sauté for few seconds.
4. Add the boiled soya chunks and mix well.
5. Remove from heat and transfer to a bowl. Add 100 grams onions, and 1 tablespoon Green Chili. Mix well and keep aside.
6. In another bowl, add 200 grams curd, 1/4 teaspoon salt, and 1 teaspoon minced garlic. Whisk well until smooth.
7. Heat 1 tablespoon oil in a pan, add 1/2 teaspoon red chili, 1/8 teaspoon turmeric, and 1 teaspoon dry fenugreek leaves. Sauté for few seconds.
8. Pour this tempering over the curd mixture and mix well.
9. Pour the curd mixture over the prepared soya mixture. Add 1 teaspoon dry fenugreek leaves and mix well.
10. Serve.
