2 Ways Fried Rice

Sweet Corn Fried Rice

Serving - 2 - 3

INGREDIENTS


Rice - 300 grams

Water - 1500 milliliters, divided

Oil - 2 tablespoons

Garlic - 1 1/2 teaspoons

Onions - 50 grams

Spring onions - 50 grams

Bell pepper - 90 grams

Carrot - 50 grams

Boiled sweet corns - 70 grams

Soy sauce - 1 tablespoon

Red chili sauce - 1 tablespoon

Salt - 1 teaspoon

Black pepper - 1/2 teaspoon

Spring onions - 30 grams

PREPARATION

1. In a bowl, add 300 grams rice, 500 milliliters water and soak for 30 minutes.

2. Take a skillet, add 1 litre water, soaked rice and mix it well.

3. Bring it to a boil.

4. Remove it from heat and drain the rice.

5. Heat 2 tablespoons oil in a heavy skillet, add 1 1/2 teaspoons garlic and stir well.

6. Then, add 50 grams onions and fry till translucent.

7. Add 50 grams spring onions and fry until it turns golden brown in color.

8. Now, add 90 grams bell pepper, 50 grams carrot, 70 grams boiled sweet corns and mix it well.

9. Cook for 5 - 7 minutes on medium heat.

10. Add 1 tablespoon soy sauce, 1 tablespoon red chili sauce, 1 teaspoon salt, 1/2 teaspoon black pepper and mix it well.

11. Then, add cooked rice in it and mix it well.

12. Now, add 30 grams spring onions and mix it again.

13. Cook for another 5 - 7 minutes on medium heat.

14. Serve hot.

Egg Fried Rice

Servings - 2 - 3

INGREDIENTS

Oil - 45 milliliters

Onions - 160 grams

Garlic paste - 2 teaspoons

Carrot - 140 grams

Green peas - 200 grams

Spring onions - 60 grams

Oil - 1 tablespoon

Eggs - 3

Soy sauce - 2 teaspoons

Kosher salt - 2 teaspoons

White pepper - 1 teaspoon

Spring onions - 30 grams

Cooked rice - 500 grams

Spring onions - for garnishing

PREPARATION

1. Heat 45 milliliters oil in a heavy skillet, add 160 grams onions and fry till translucent.

2. Add 2 teaspoons garlic paste and saute for 2 - 3 minutes or until it turns golden brown in color.

3. Then, add 140 grams carrot, 200 grams green peas, 60 grams spring onions and mix it well.

4. Saute the veggies for 7 - 10 minutes.

5. Side the veggies in skillet, add 1 tablespoon oil then add 3 eggs and scramble them.

6. Cook till the eggs are fully cooked.

7. Mix it with the veggies.

8. Now, add 2 teaspoons soy sauce, 2 teaspoons kosher salt, 1 teaspoon white pepper and mix it well.

9. Add 30 grams spring onions and mix it again.

10. Then, add 500 grams cooked rice and mix it well.

11. Cook for another 3 - 5 minutes.

12. Garnish with spring onions.

13. Serve hot.
