Achari Gobi Paneer

INGREDIENTS
Paneer - 200 grams
Garlic - 1 tablespoon
Ginger - 1 tablespoon
Salt - 1/4 teaspoon
Red chili - 1/4 teaspoon
Lemon juice - 1 tablespoon
Fennel seeds - 1 teaspoon
Cumin - 1 teaspoon
Mustard seeds - 1 teaspoon
Nigella seeds - 1/4 teaspoon
Fenugreek seeds - 1/4 teaspoon
Oil - 25 mililiters
Cauliflower - 390 grams
Oil - 30 mililiters
Garlic - 1 tablespoon
Ginger - 1 tablespoon
Onions - 90 grams
Tomato - 80 grams
Green chili - 1 tablespoon
Salt - 1/2 teaspoon
Red chili - 1 teaspoon
Turmeric - 1 teaspoon
Garam masala - 1/4 teaspoon
Yogurt - 60 grams
Mango pickle masala - 2 tablespoons
PREPARATION
- In a mixing bowl, add 200 grams panner, 1 tablespoon garlic, 1 tablespoon ginger, 1/4 teaspoon salt, 1/4 teaspoon red chili, 1 tablespoon lemon juice and mix it well.
- Marinate for 25 - 30 minutes.
- In a another mixing bowl, add 1 teaspoon fennel seeds, 1 teaspoon cumin seeds, 1 teaspoon mustard seeds, 1/4 teaspoon nigella seeds, 1/4 teaspoon fenugreek seeds and mix it well, keep a side.
- Heat 25 milliliters oil in a pan, add marinated paneer and saute for 1 - 2 minutes on a medium heat.
- Now, Take 390 grams cauliflower and heat sufficient oil in a deep fryer and deep fry these till golden brown and crispy. Drain it on an absorbent paper.
- Heat 30 milliliters oil in a pan, add prepared mixture and saute for 1 - 2 minutes.\
- Add 1 tablespoon garlic, 1 tablespoon ginger and mix it.
- Now, 90 grams onions and fry till translucent or until it turns golden brown in color.
- Add 80 grams tomato, 1 tablespoon green chili and cook for 3 - 5 minutes.
- Add 1/2 teaspoon salt, 1 teaspoon red chilli, 1 teaspoon turmeric, 1/4 teaspoon garam masala and mix it well.
- Add 60 grams yogurt, 2 tablespoons mango pickle masala and mix it well.
- Add fried cauliflower, saute panner and cook for 3 - 5 minutes on a medium heat.
- Serve.
