Aloo Gobi Methi Tuk

INGREDIENTS
Oil - for frying
Potatoes - 250 grams
Cauliflower - 400 grams
Oil - 2 teaspoons
Cumin - 1 teaspoon
Asafoetida - 1/4 teaspoon
Ginger paste - 2 teaspoons
Green chili - 1 teaspoon
Fenugreek leaves - 50 grams
Salt - 1 teaspoon
Dry mango powder - 1 1/4 teaspoon
Chaat masala - 1/2 teaspoon
PREPARATION
- Take 250 grams potatoes and slice into wedges.
- Heat some oil in a pan and shallow fry the potatoes till they turn light golden brown.
- Now, take a 400 grams cauliflower and cut it into small pieces.
- Heat some oil in a pan and shallow fry the cauliflower till they turn light golden brown.
- Then, heat 2 teaspoons oil in a heavy skillet, add 1/4 teaspoon cumin, 1/4 teaspoon asafoetida and saute for 1 - 2 minutes.
- Add 2 teaspoons ginger paste, 1 teaspoon green chili, 50 grams fenugreek leaves and cook for 3 - 5 minutes.
- Now, add fried potatoes, fried cauliflowers and mix it well.
- Then, add 1 teaspoon salt, 1 1/4 teaspoons dry mango powder, 1/2 teaspoon chaat masala and mix it well to combine.
- Cover it with lid and cook for 5 minutes.
- Remove it from heat.
- Garnish with green chili.
- Serve.
