Cream Of Broccoli Soup
Servings - 3
INGREDIENTS
Olive oil - 2 teaspoons
Garlic - 1 teaspoon
Onions - 50 grams
Broccoli - 130 grams
Water - 700 milliliters
Salt - 1/4 teaspoon
Butter - 2 teaspoons
All purpose flour - 1 1/2 tablespoons
Milk - 300 milliliters
Salt - 1/4 teaspoon
Black pepper powder - 1/4 teaspoon
Cumin powder - 1/4 teaspoon
Garam masala - 1/4 teaspoon
Fresh cream - for garnishing
Blanched broccoli - for garnishing
PREPARATION
- Heat 2 teaspoons olive oil in a skillet, add 1 teaspoon garlic and stir well.
- Then, add 50 grams onions and fry till translucent or until it turns golden brown in color.
- Now, add 130 grams broccoli and mix it well.
- Cook for 5 - 7 minutes on medium heat.
- Add 700 milliliters water, 1/4 teaspoon salt and mix it well.
- Cover it with lid and cook for about 7 - 8 minutes on medium heat.
- Open the lid and remove it from heat.
- Transfer this into a blender and blend it into a puree. Keep aside.
- Heat 2 teaspoons butter in a heavy skillet, add 1 1/2 tablespoons all purpose flour and mix it well.
- Then, add 300 milliliters milk and mix it well.
- Bring it to a boil.
- Now, add the blended puree and mix it well.
- Cook for 5 - 7 minutes on medium heat.
- Add 1/4 teaspoon salt, 1/4 teaspoon black pepper powder, 1/4 teaspoon cumin powder, 1/4 teaspoon garam masala and mix it well.
- Cook for another 3 - 5 minutes on medium heat.
- Remove it from heat.
- Garnish with fresh cream and blanched broccoli.
- Serve hot.
