Lauki Ka Bharta

INGREDIENTS
Bottle gourd - 530 grams
Water - 1.3 litres
Oil - 35 milliliters
Cumin - 1 teaspoon
Ginger - 2 teaspoons
Garlic - 2 teaspoons
Green chili - 1 1/2 teaspoons
Onions - 235 grams
Tomato - 300 grams
Turmeric - 1/2 teaspoon
Salt - 1 teaspoon
Paprika - 1/2 teaspoon
Coriander powder - 1 teaspoon
Red chili - 1/2 teaspoon
Green peas - 90 grams
Garam masala - 1/2 teaspoon
Sugar - 1/4 teaspoon
Coriander - 1 tablespoon
PREPARATION
- Take a skillet, add 530 grams bottle gourd, 1.3 litres water and bring it to a boil.
- Cover it with lid and cook for about 10 - 15 minutes on medium heat.
- Open the lid and remove it from heat.
- Drain the bottle gourds and transfer this into a bowl.
- Mash the bottle gourd properly with the help of a food masher and keep aside.
- Heat 35 milliliters oil in a skillet, add 1 teaspoon cumin, 2 teaspoons ginger, 2 teaspoons garlic, 1 1/2 teaspoons green chili and stir for 2 - 3 minutes.
- Then, add 235 grams onions and fry till translucent or until it turns golden brown in color.
- Now, add 300 grams tomato and mix it well.
- Cover it with lid and cook for about 5 - 7 minutes on medium heat.
- Open the lid and give it a nice stir.
- Add 1/2 teaspoon turmeric and mix it well.
- Add 1 teaspoon salt, 1/2 teaspoon paprika, 1 teaspoon coriander powder, 1/2 teaspoon red chili and mix it well.
- Then, add 90 grams green peas and mix it again.
- Cook for 5 - 7 minutes on medium heat.
- Now, add the mashed bottle gourd in it and mix it well.
- Cover it with lid and cook for about 8 - 10 minutes on medium heat.
- Open the lid and give it a nice stir.
- Add 1/2 teaspoon garam masala, 1/4 teaspoon sugar and mix it well.
- Cook for 3 - 5 minutes on medium heat.
- Add 1 tablespoon coriander and mix it again.
- Cook for another 3 - 5 minutes on medium heat.
- Remove it from heat.
- Serve hot.
