Palak Soya Paneer

INGREDIENTS
Water - 1 litre
Spinach - 320 grams
Cold water
Soya paneer - 450 grams
Salt - 1/4 teaspoon
Black pepper - 1/4 teaspoon
Ghee - 2 tablespoons
Garlic - 1 tablespoon
Ginger - 1 tablespoon
Onions - 150 grams
Salt - 1/2 teaspoon
Black salt - 1/4 teaspoon
Red chili - 1 teaspoon
Cumin powder - 1 teaspoon
Green chili - 1 tablespoon
Water - 200 milliliters
Fresh cream - 2 tablespoons
Garam masala - 1/2 teaspoon
Fresh cream - for garnishing
PREPARATION
- Take a heavy skillet, add 1 litre water and bring it to a boil.
- Add 320 grams spinach and mix it well.
- Bring it to a boil. Boil for 5 - 7 minutes on medium heat.
- Strain the spinach and wash it with cold water.
- Transfer this into a blender and blend it into a puree.
- In a mixing bowl, add 450 grams soya paneer, 1/4 teaspoon salt, 1/4 teaspoon black pepper and mix it well.
- Marinate for 15 - 20 minutes.
- Heat 2 tablespoons ghee in a skillet, add 1 tablespoon garlic, 1 tablespoon ginger and stir well.
- Then, add 150 grams onions and fry till translucent or until it turns golden brown in color.
- Add 1/2 teaspoon salt, 1/4 teaspoon black salt, 1 teaspoon red chili, 1 teaspoon cumin powder and mix it well.
- Add 1 tablespoon green chili and mix it well.
- Cook for 5 - 7 minutes on medium heat.
- Then, add the blended puree and mix it well.
- Add 200 milliliters water and mix it well.
- Bring it to a boil. Add 2 tablespoons fresh cream and mix it well.
- Add 1/2 teaspoon garam masala and mix it well.
- Now, add the marinated soya paneer and mix it well.
- Cook for 5 - 7 minutes on medium heat.
- Remove it from heat.
- Garnish with fresh cream.
- Serve hot.
