Red Beans Salad
Servings - 2 - 3
INGREDIENTS
Water - 1.5 litres
Brown rice - 250 grams
Olive oil - 45 milliliters
Vinegar - 1 tablespoon
Salt - 1 teaspoon
Black pepper powder - 1/2 teaspoon
Boiled brown rice - 250 grams
Bell pepper - 140 grams
Boiled kidney beans - 200 grams
Onions - 130 grams
Coriander - 12 grams
PREPARATION
1. Take a heavy skillet, add 1.5 litres water and bring it to a boil.
2. Add 250 grams brown rice and mix it well.
3. Boil for 8 - 10 minutes on medium heat or until the rice is done.
4. Remove it from heat and drain the rice. Keep aside.
5. In a bowl, add 45 milliliters olive oil, 1 tablespoon vinegar, 1 teaspoon salt, 1/2 teaspoon black pepper powder and mix it well.
6. In a mixing bowl, add boiled brown rice, 140 grams bell pepper, 200 grams boiled kidney beans, 130 grams onions, 12 grams coriander, prepared dressing and mix it well.
7. Serve.
Vegetable Salad

INGREDIENTS

Water - 800 milliliters
Carrots - 170 grams
Water - 1500 milliliters
Brown rice - 250 grams
Oil - 45 milliliters
Lemon juice - 2 tablespoons
Salt - 1 teaspoon
Black pepper powder - 1/2 teaspoon
Bell pepper - 200 grams
Green peas - 200 grams
Black olives - 2 tablespoons
PREPARATION
1. Take a skillet, add 800 milliliters water, 170 grams carrots and bring it to a boil.
2. Boil for 5 - 7 minutes on medium heat.
3. Remove it from heat and drain the carrots.
4. Take a heavy skillet, add 1.5 litres water and bring it to a boil.
5. Add 250 grams brown rice and mix it well.
6. Boil for 8 - 10 minutes on medium heat or until the rice is done.
7. Remove it from heat and drain the rice. Keep aside.
8. In a bowl, add 45 milliliters olive oil, 2 tablespoons lemon juice, 1 teaspoon salt, 1/2 teaspoon black pepper powder and mix it well.
9. In a mixing bowl, add boiled brown rice, 200 grams bell pepper, boiled carrots, 200 grams green peas, 2 tablespoons black olives, prepared dressing and mix it well.
10. Serve.
Brown Rice Salad With Chicken
Servings - 2 - 3
INGREDIENTS

Chicken breast - 800 grams
Salt - 1 teaspoon
Black pepper powder - 1 teaspoon
Butter - for frying
Water - 1500 milliliters
Brown rice - 250 grams
Olive oil - 35 milliliters
Vinegar - 1 tablespoon
Salt - 1 teaspoon
Black pepper powder - 1 teaspoon
Bell pepper - 250 grams
Apple - 250 grams
Spinach - 85 grams
PREPARATION
1. Take a chicken breast and sprinkle some salt and black pepper on it.
2. Coat it completely.
3. Heat some butter in a grill pan and add the chicken breast on it.
4. Cook until it turns golden brown in color from all sides.
5. Remove it from heat and cut into pieces. Keep aside.
6. Take a heavy skillet, add 1.5 litres water and bring it to a boil.
7. Add 250 grams brown rice and mix it well.
8. Boil for 8 - 10 minutes on medium heat or until the rice is done.
9. Remove it from heat and drain the rice. Keep aside.
10. In a bowl, add 35 milliliters olive oil, 1 tablespoon vinegar, 1 teaspoon salt, 1 teaspoon black pepper powder and mix it well.
11. In a mixing bowl, add boiled brown rice, 250 grams bell pepper, 250 grams apple, 85 grams spinach, grilled chicken, prepared dressing and mix it well.
12. Serve.
