Afghani Chicken Momos
Servings - 2 - 3
INGREDIENTS
All purpose flour - 250 grams
Salt - 1/4 teaspoon
Oil - 1 teaspoon
Water - 200 milliliters
Cashews - 65 grams
Water - 100 milliliters
Poppy seeds - 1 tablespoon
Water - 50 milliliters
Oil - 30 milliliters
Garlic paste - 1 teaspoon
Onions - 80 grams
Minced chicken - 450 grams
Salt - 1 teaspoon
Black pepper powder - 1/2 teaspoon
Vinegar - 1/2 teaspoon
Soy sauce - 1/2 teaspoon
Fresh cream - 115 grams
Curd - 85 grams
Salt - 1/2 teaspoon
Black pepper powder - 1/2 teaspoon
Cardamom powder - 1/2 teaspoon
Oil - 1 teaspoon
PREPARATION
1. In a mixing bowl, add 250 grams all purpose flour, 1/4 teaspoon salt, 1 teaspoon oil, 200 milliliters water and knead it into a smooth soft dough.
2. Rest the dough for 30 minutes.
3. In a bowl, add 65 grams cashews, 100 milliliters water and soak for 2 hours.
4. In a another bowl, add 1 tablespoon poppy seeds, 50 milliliters water and soak for 2 hours.
5. Heat 30 milliliters oil in a pan, add 1 teaspoon garlic paste and stir well.
6. Then, add 80 grams onions and fry till translucent or until it turns golden brown in color.
7. Now, add 450 grams minced chicken and mix it well.
8. Cook for 7 - 10 minutes on medium heat.
9. Add 1 teaspoon salt, 1/2 teaspoon black pepper powder, 1/2 teaspoon vinegar, 1/2 teaspoon soy sauce and mix it well.
10. Cook for 3 - 5 minutes on emidum heat.
11. Remove it from heat and keep side.
12. Take a ball from dough and dust it with flour.
13. Flatten the dough with the help of a rolling pin.
14. Cut out a circle from it.
15. Add some prepared chicken on it and shape them like a momo. (See Video)
16. Place them in a steamer and steam for about 10 minutes.
17. Remove it from steamer and keep aside.
18. In a blender, add soaked cashews, soaked poppy seeds and blend it into a smooth paste. Keep aside.
19. In a mixing bowl, add 115 grams fresh cream, 85 grams curd, blended paste, 1/2 teaspoon salt, 1/2 teaspoon black pepper powder, 1/2 teaspoon cardamom powder and mix it well.
20. Now add the momos in it and mix it well.
21. Marinate for 30 minutes.
22. Heat 1 teaspoon oil in a pan, add the marinated momos in it.
23. Cook until it turns golden brown in color.
