Chicken Chinthamani
Servings - 2 - 3
INGREDIENTS
Chicken breast - 500 grams
Salt - 1 teaspoon
Turmeric - 1 teaspoon
Oil - for frying
Sesame oil - 2 tablespoons
Onions - 150 grams
Chilli flakes - 1 teaspoon
Curry leaves - 1 teaspoon
Green chili - 3
Vinegar - 1 tablespoon
Salt - 1 teaspoon
Coriander - 1 tablespoon
PREPARATION
1. In a mixing bowl, add 500 grams chicken breast, 1 teaspoon salt, 1 teaspoon turmeric and mix it well.
2. Marinate for 60 minutes.
3. Heat sufficient oil in a heavy skillet and deep fry these until golden brown in color.
4. Remove it from heat and drain it on an absorbent paper.
5. Heat 2 tablespoons oil in a heavy skillet, add 150 grams onions and fry till translucent or until it turns golden brown in color.
6. Add 1 teaspoon chilli flakes, 1 teaspoon curry leaves, 3 green chili and mix it well.
7. Add 1 tablespoon vinegar, 1 teaspoon salt and mix it well.
8. Cook for 3 - 5 minutes on medium heat.
9. Now, add the fried chicken in it and mix it well.
10. Cook for 5 - 7 minutes on medium heat.
11. Add 1 tablespoon coriander and mix it well.
12. Remove it from heat.
13. Garnish with coriander.
14. Serve hot.
