Mutton Hari Kabab

INGREDIENTS
Mutton - 1 kilogram
Curd - 200 grams
Garlic - 1 teaspoon
Ginger - 1 teaspoon
Red chili - 1 teaspoon
Cumin powder - 1 teaspoon
Garam masala - 1 teaspoon
Coriander powder - 1 teaspoon
Meat masala - 1 teaspoon
Salt - 1 teaspoon
Ghee - 50 milliliters
Cardamom - 5 pods
Black peppercorns - 6
Cloves - 6 pods
Cinnamon stick - 1
Bay leaf - 1
Onions - 200 grams
Ghee - 40 milliliters
Coriander - for garnishing
PREPARATION
- In a mixing bowl, add 1 kilogram mutton, 200 grams curd, 1 teaspoon garlic, 1 teaspoon ginger, 1 teaspoon red chili, 1 teaspoon cumin powder, 1 teaspoon garam masala, 1 teaspoon coriander powder, 1 teaspoon meat masala, 1 teaspoon salt and mix all the ingredients well.
- Marinate for 2 hours.
- Heat 50 milliliters ghee in a skillet, add 5 pods cardamom, 6 black peppercorns, 6 pods cloves, 1 cinnamon stick, 1 bay leaf, 200 grams onions and fry till translucent or until it turns golden brown in color.
- Remove it from heat and transfer this into a blender.
- Blend it into a paste and keep aside.
- Heat 40 milliliters ghee in a heavy skillet, add the marinated mutton in it and mix it well.
- Cook for 8 - 10 minutes on medium heat.
- Cover it with lid and cook for about 30 minutes on medium heat.
- Open the lid, add the blended onion paste in it and mix it well.
- Cook for another 5 - 7 minutes on medium heat.
- Remove it from heat.
- Garnish with coriander.
- Serve hot.
