INGREDIENTS

Water - 1200 milliliters

Turmeric - 1/4 teaspoon

Salt - 1/2 teaspoon

Ginger - 1 tablespoon

Garlic - 1 tablespoon

Mutton keema - 495 grams

Oil - 30 milliliters

Black peppercorns - 4

Cloves - 3

Black cardamom - 1

Green cardamom - 2

Cinnamon stick - 1

Bay leaf - 1

Ginger garlic paste - 1 tablespoon

Green chili - 1 1/2 teaspoons

Onions - 200 grams

Tomato - 245 grams

Turmeric - 1/4 teaspoon

Red chili - 1 teaspoon

Coriander powder - 1 teaspoon

Cumin powder - 1 teaspoon

Salt - 1 teaspoon

Green peas - 70 grams

Mutton stock - 550 milliliters, divided

Eggs - 3

Coriander - 1 tablespoon

Butter - 1 teaspoon

Pav buns

Butter - 1 teaspoon

Egg - 1

Salt - 1/4 teaspoon

Red chili - 1/4 teaspoon

Coriander - 2 tablespoons

PREPARATION

1. Heat 1200 milliliters water in a skillet, add 1/4 teaspoon turmeric, 1/2 teaspoon salt, 1 tablespoon ginger, 1 tablespoon garlic and stir well.

2. Then, add 495 grams mutton keema and mix it well.

3. Boil mutton for 10 - 12 minutes.

4. Remove it from heat and strain the mutton. Keep aside.

5. Heat 30 milliliters oil in a skillet, add 4 black peppercorns, 3 cloves, 1 black cardamom, 2 green cardamom, 1 cinnamon stick, 1 bay leaf and stir well.

6. Add 1 tablespoon ginger garlic paste, 1 1/2 teaspoons green chili and stir for 1 - 2 minutes.

7. Then, add 200 grams onions and fry till translucent or until it turns golden brown in color.

8. Now, add 245 grams tomato and saute until it turns soft and pulpy.

9. Cook for 3 - 5 minutes on medium heat.

10. Add 1/4 teaspoon turmeric and stir well.

11. Add 1 teaspoon red chili, 1 teaspoon coriander powder, 1 teaspoon cumin powder, 1 teaspoon salt and mix it well.

12. Then, add 70 grams green peas and mix it well.

13. Now, add 250 milliliters mutton stock and mix it again.

14. Bring it to a boil.

15. Add the boiled mutton keema and mix it well.

16. Add 300 milliliters mutton stock and mix it well.

17. Cover it with lid and cook for about 5 - 7 minutes on medium heat.

18. Open the lid and give it a nice stir.

19. Add 3 eggs and mix it well.

20. Add 1 tablespoon Coriander and mix it again.

21. Cook for 3 - 5 minutes on medium heat.

22. Remove it from heat.

23. Heat 1 teaspoon butter in a pan.

24. Add the pav buns and cook for 2 - 3 minutes from both sides.

25. Remove it from heat.

26. Heat 1 teaspoon butter in a pan, add 1 egg.

27. Sprinkle some salt and red chili on it.

28. Cook for 3 - 5 minutes on medium heat.

29. Remove it from heat.

30. Serve mutton ghotala with fried egg and toasted pav buns.
