Orange Chicken Burrito

INGREDIENTS
Butter - 1 tablespoon
Sesame oil - 1 tablespoon
Carrots - 75 grams
Cabbage - 70 grams
Kosher salt - 1 teaspoon
Soy sauce - 1 1/2 teaspoons
Boiled rice - 270 grams
Eggs - 2
All purpose flour - 140 grams
Corn flour - 50 grams
Kosher salt - 1 teaspoon
Egg - 1
Water - 250 milliliters
Boneless chicken - 370 grams
Oil - for frying
Oil - 30 milliliters
Ginger - 2 teaspoons
Garlic - 2 teaspoons
Chilli flakes - 1/2 teaspoon
Orange juice - 200 milliliters
Powdered sugar - 40 grams
Vinegar - 60 milliliters
Soy sauce - 2 tablespoons
Corn flour - 1 1/2 tablespoons
Water - 60 milliliters
Water - 500 milliliters
Broccoli - 130 grams
Sriracha sauce - 1 1/2 tablespoons
Oyster sauce - 1 1/2 teaspoons
Mayonnaise - 1 1/2 tablespoons

PREPARATION
- Heat 1 tablespoon butter, 1 tablespoon sesame oil in a skillet, add 75 grams carrots, 70 grams cabbage and mix it well.
- Cook for 5 - 7 minutes on medium heat.
- Add 1 teaspoon kosher salt, 1 1/2 teaspoons soy sauce and mix it well.
- Then, add 270 grams boiled rice and mix it well.
- Cook for 5 - 7 minutes on medium heat.
- Now, ad 2 eggs in it and mix it well.
- Cook for another 5 - 7 minutes on medium heat.
- Remove it from heat and keep aside.
- In a mixing bowl, add 140 grams all purpose flour, 50 grams corn flour, 1 teaspoon kosher salt, 1 egg and mix it well.
- Add 250 milliliters water and mix it well to make a thick batter.
- Then, add 370 grams boneless chicken and mix it well.
- Refrigerate for 30 minutes.
- Heat sufficient oil in a heavy skillet and deep fry these until golden brown and crispy.
- Drain it on an absorbent paper and keep aside.
- Heat 2 tablespoons oil in a skillet, add 2 teaspoons ginger, 2 teaspoons garlic, 1/2 teaspoon chilli flakes and stir well.
- Now, add 200 milliliters orange juice and stir well.
- Add 40 grams powdered sugar and mix it well.
- Add 60 milliliters vinegar, 2 tablespoons soy sauce and mix it again.
- Bring it to a boil.
- In a bowl, add 1 1/2 tablespoons corn flour, 60 milliliters water and mix it well.
- Pour the mixture into the skillet and mix it well.
- Cook for 3 - 5 minutes or until the gravy thickens.
- Now, add the fried chicken and mix it well.
- Cook for 5 - 7 minutes on medium heat.
- Remove it from heat and keep aside.
- Take a pan, add 500 milliliters water, 130 grams broccoli and mix it well.
- Bring it to a boil.
- Boil for 3 - 5 minutes on medium heat.
- Remove it from heat and drain the broccoli.
- Transfer this into a bowl, add 1 1/2 tablespoons sriracha sauce, 1 1/2 teaspoons oyster sauce, 1 1/2 tablespoons mayonnaise and mix it well.
- Take a tortilla, add the cooked rice on it.
- Then, add the broccoli mixture on top of it.
- Now, add the cooked orange chicken on it.
- Roll it like a burrito.
- Cover it with aluminium foil.
- Cut it into half.
- Serve.
