Potato Bird Nest With Dry Chicken

INGREDIENTS
Grated potatoes - 620 grams
Egg - 1
Corn flour - 35 grams
Salt - 1/2 teaspoon
Oil - for frying
Water - 500 milliliters
Cauliflower - 150 grams
Baby corn - 35 grams
Oil - 30 milliliters
Boneless chicken - 720 grams
Onions - 90 grams
Bell pepper - 305 grams
Mushrooms - 100 grams
Pineapple - 145 grams
Oil - 2 tablespoons
Garlic - 2 tablespoons
Chili sauce - 25 milliliters
Oyster sauce - 2 tablespoons
Salt - 1 teaspoon
Black pepper - 1/2 teaspoon
Sugar - 2 teaspoons
Lemon juice - 2 tablespoons
Spring onions - for garnishing
PREPARATION
- In a mixing bowl, add 620 grams grated potatoes, 1 egg, 35 grams corn flour, 1/2 teaspoon salt and mix it well.
- Take a bowl and place a stainer on it.
- Take a portion of potatoes and put them into the strainer into a circular shape like nest.
- Fry until it turns golden brown and crispy.
- Remove it from heat and drain it on an absorbent paper.
- Take a pan, add 500 milliliters water, 150 grams cauliflower, 35 grams baby corn and mix it well.
- Bring it to a boil.
- Boil for 5 - 7 minutes on medium heat.
- Remove it from heat and drain the veggies.
- Heat 30 milliliters oil in a heavy skillet, add 720 grams boneless chicken and mix it well.
- Cook for 8 - 10 minutes on medium heat.
- Then, add 90 grams onions and fry till translucent.
- Now, add the boiled veggies, 305 grams bell pepper, 100 grams mushrooms, 145 grams pineapple and mix it well.
- Cook for 5 - 7 minutes on medium heat.
- Heat 2 tablespoons oil in a heavy skillet, add 2 tablespoons garlic and stir well.
- Add 25 milliliters chili sauce, 2 tablespoons oyster sauce, 1 teaspoon salt, 1/2 teaspoon black pepper, 2 teaspoons sugar, 2 tablespoons lemon and mix it well.
- Then, add the cooked chicken and mix it well.
- Cook for 5 - 7 minutes on medium heat.
- Remove it from heat.
- Add the chicken in prepared nests.
- Garnish with spring onions.
- Serve.
