Schezwan Egg Bhurji Basket
Servings - 3 - 4
INGREDIENTS
Eggs - 4
Black Pepper - 1/4 teaspoon
Salt - 1/4 teaspoon
Oil - 30 milliliters
Ginger - 1 1/2 teaspoon
Garlic - 1 1/2 teaspoon
Onion - 120 grams
Green Chilli - 1 teaspoon
Tomato - 190 grams
Bell Pepper - 110 grams
Green Peas - 35 grams
Green Bell Pepper - 30 grams
Salt - 1 teaspoon
Schezwan Sauce - 30 grams
Green Onions - 1 tablespoon
Spring roll sheets
Oil - for brushing
Green onions - for garnishing
PREPARATION
- In a mixing bowl, add 4 eggs, 1/4 teaspoon black pepper, 1/4 teaspoon salt and mix it well.
- Heat 30 milliliters oil in a skillet, add 1 1/2 teaspoon ginger, 1 1/2 teaspoon garlic and saute for 1 - 2 minutes.
- Then add 120 grams onion, 1 teaspoon green chilli and fry till translucent.
- Now, add 190 grams tomato and mix it well.
- Saute until it turns soft and pulpy.
- Now, add 110 grams bell pepper, 35 grams green peas, 30 grams green bell pepper and mix it well.
- Cook for another 5 - 7 minutes on medium heat.
- Add 1 teaspoon salt, 30 grams Schezwan Sauce and mix it well.
- Then, add the egg mixture in it and mix it well.
- Cook for 7 - 10 minutes on medium heat.
- Add 1 tablespoon green tablespoon and mix it well.
- On cutting board, Take a spring roll sheet and cut it into circle.
- Brush it with oil.
- Place one circle on another circle halfway. (See Video)
- Place it on a muffin tray to make basket.
- Preheat the oven to 350°F/180°C. Bake for 8 - 10 minutes.
- Remove it from oven and allow it to cool.
- Fill the prepared baskets with prepared schezwan egg bhurji mixture.
- Garnish with green onions.
- Serve.
