INGREDIENTS
Olive oil - 1 teaspoon
Quinoa - 55 grams
Water - 250 milliliters
Banana - 55 grams
Whole milk yogurt - 1 tablespoon
Cinnamon powder - 1/8 teaspoon
PREPARATION
1. Heat 1 teaspoon olive oil in a pan, add 55 grams quinoa and stir well.
2. Cook for 2 - 3 minutes on medium heat.
3. Then, add 250 milliliters water and mix it well.
4. Bring it to a boil.
5. Cover it with lid and cook for about 20 minutes on medium heat.
6. Open the lid and give it a nice stir.
7. Remove it from heat and cool for about 5 - 8 minutes.
8. In a bowl, add 55 grams banana and mash them with the help of a fork.
9. Add 1 tablespoon whole milk yogurt, cooked quinoa, 1/8 teaspoon cinnamon powder and mix it well.
10. Serve.
Quinoa Ratatouille

INGREDIENTS
Olive oil - 10 milliliters
Onions - 50 grams
Tomato - 50 grams
Eggplant - 50 grams
Zucchini - 75 grams
Bell pepper - 50 grams
Tomato paste - 2 tablespoons
Dried thyme - 1/4 teaspoon
Garlic powder - 1/4 teaspoon
Quinoa - 55 grams
Vegetable stock - 300 milliliters
Parsley - 1 tablespoon
Parmesan cheese - 1 1/2 tablespoons
PREPARATION
1. Heat 10 milliliters olive oil in a skillet, add 50 grams onions and fry till translucent or until it turns golden brown in color.
2. Then, add 50 grams tomato and mix it well.
3. Now, add 50 grams eggplant, 75 grams zucchini, 50 grams bell pepper and mix it well.
4. Cook for 5 - 7 minutes on medium heat.
5. Add 2 tablespoons tomato paste, 1/4 teaspoon dried thyme, 1/4 teaspoon garlic powder and mix it well.
6. Add 55 grams quinoa and mix it well.
7. Then, add 300 milliliters vegetable stock and mix it again.
8. Bring it to a boil.
9. Cover it with lid and cook for about 20 minutes on medium heat.
10. Open the lid and give it a nice stir.
11. Remove it from heat and cool for about 5 - 8 minutes.
12. Transfer this into a blender, add 1 tablespoon parsley, 1 1/2 tablespoons parmesan cheese and blend it into a smooth puree.
13. Serve.
Apricot & Banana With Cinnamon

Apricot - 60 grams
Banana - 270 grams
Cinnamon powder - 1/8 teaspoon
PREPARATION
1. Take 60 grams apricot and cut it into pieces.
2. Take 270 grams banana and cut it into pieces.
3. Transfer the apricot and banana into a blender.
4. Blend it into a smooth puree.
5. Transfer this into a bowl, add 1/8 teaspoon cinnamon powder and mix it well.
6. Serve.
