Keto Lauki Soup

INGREDIENTS
Oil - 2 teaspoons
Cumin - 1 teaspoon
Garlic - 1 teaspoon
Onions - 80 grams
Bottle gourd - 300 grams
Salt - 1 teaspoon
Coriander - 1 tablespoon
Water - 650 milliliters, divided
Black pepper - 1/4 teaspoon
Black pepper - for garnishing
Coriander - for garnishing
PREPARATION
- Heat 2 teaspoons oil in a heavy skillet, add 1 teaspoon cumin and stir well.
- Add 1 teaspoon garlic and stir again for a minute.
- Then, add 80 grams onions and fry till translucent.
- Now, add 300 grams bottle gourd, 1 teaspoon salt, 1 tablespoon coriander and mix it well.
- Add 300 milliliters water and mix it well.
- Cover it with lid and cook for 10 - 12 minutes on medium heat.
- Open the lid and give it a nice stir.
- Cool for about 10 minutes.
- Transfer this into a blender and blend it into a puree.
- Transfer this into a skillet, add 350 milliliters water and mix it well.
- Bring it to a boil.
- Add 1/4 teaspoon black pepper and mix it well.
- Remove it from heat.
- Garnish with black pepper and coriander.
- Serve hot.
