Spring Roll Samosa
Servings - 4
INGREDIENTS
All purpose flour - 150 grams
Salt - 1/4 teaspoon
Oil - 2 teaspoons
Water - 80 milliliters
Oil - 1 tablespoon
Crushed cumin seeds - 1 teaspoon
Crushed coriander seeds - 1 teaspoon
Ginger - 1 teaspoon
Green Chili - 1 teaspoon
Boiled green peas - 50 grams
Boiled mashed potatoes - 250 grams
Salt - 1/2 teaspoon
Turmeric - 1/8 teaspoon
Red chili - 1/4 teaspoon
Garam Masala - 1 teaspoon
Dry mango powder - 1 teaspoon
Coriander - 1 teaspoon
All purpose flour - 2 tablespoons
Corn flour - 1 tablespoon
Water - 40 milliliters
All purpose flour - for dusting
Oil - for frying
PREPARATION
1. In a bowl, add 150 grams all purpose flour, 1/4 teaspoon salt, and 2 teaspoons oil. Mix well using your hands.
2. Add 80 milliliters water and knead into a dough. Cover and let it rest for 10 minutes.
3. Heat 1 tablespoon oil in pan, add 1 teaspoon crushed cumin seeds, 1 teaspoon crushed coriander seeds, 1 teaspoon ginger, and 1 teaspoon Green Chili. Sauté for 30 seconds.
4. Add 50 grams boiled green peas and cook for 2 - 3 minutes.
5. Add 250 grams boiled mashed potatoes, 1/2 teaspoon salt, 1/8 teaspoon turmeric, 1/4 teaspoon red chili, 1 teaspoon Garam Masala, and 1 teaspoon dry mango powder. Mix until well combined.
6. Remove from heat and let the filling cool for 10 minutes.
7. In a small bowl, add 2 tablespoons all purpose flour, 1 tablespoon corn flour, and 40 milliliters water. Mix well to make a smooth slurry.
8. Take a portion of the prepared dough, dust it with some all-purpose flour, and roll it out using a rolling pin.
9. Trim the sides to make a rectangle. Place some prepared potato filling, apply the flour slurry on one edge, and roll it tightly.
10. Deep fry the prepared spring roll samosas in hot oil until golden brown and crispy. Drain on absorbent paper.
11. Serve hot with ketchup.
