Anarkali Salad

Servings - 2 - 3

INGREDIENTS
Olive oil - 1 tablespoon
Sesame seeds - 1 teaspoon
Cabbage - 160 grams
Boiled potatoes - 130 grams
Onions - 120 grams
Cucumber - 200 grams
Tomato - 150 grams
Pomegranate - 130 grams
Salt - 1/4 teaspoon
Black pepper - 1/4 teaspoon
Lemon juice - 1 tablespoon
Chaat masala - 1 teaspoon

PREPARATION
1. Heat 1 tablespoon olive oil in a pan, add 1 teaspoon sesame seeds and roast for 2 - 3 minutes on medium heat.
2. Remove it from heat.
3. In a mixing bowl, add all the ingredients and mix it well.
4. Garnish with sesame seeds mixture.
5. Serve.

Avocado Chicken & Strawberry Salad

Servings - 2 - 3

INGREDIENTS
Chicken breast - 350 grams
Black pepper - 1/4 teaspoon
Salt - 1/2 teaspoon
Paprika - 1/4 teaspoon
Mixed herbs - 1/4 teaspoon
Oil - for shallow frying
Olive oil - 2 tablespoons
Soy sauce - 1 tablespoon
Honey - 1 tablespoon
Salt - 1/2 teaspoon
Black pepper - 1/4 teaspoon
Paprika - 1/4 teaspoon
Fennel seeds powder - 1/2 teaspoon
Cherry tomato - 70 grams
Strawberry - 150 grams
Onions - 70 grams
Avocado - 80 grams
Feta cheese - 120 grams
Almonds - 100 grams

PREPARATION
1. In a mixing bowl, add 350 grams chicken breast, 1/4 teaspoon black pepper, 1/2 teaspoon salt, 1/4 teaspoon paprika, 1/4 teaspoon mixed herbs and mix it well.
2. Marinate for 30 minutes.
3. Heat some oil in a grill pan, add the marinated chicken breast on it.
4. Cook until it turns golden brown in color from both sides.
5. Remove it from heat and place it on a board.
6. Shred the chicken with the help of a fork.
7. In a bowl, add 2 tablespoons olive oil, 1 tablespoon soys sauce, 1 tablespoon honey, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/4 teaspoon paprika, 1/2 teaspoon fennel seeds powder and mix it well.
8. In a mixing bowl, add the shredded chicken, 70 grams cherry tomato, 150 grams strawberry, 70 grams onions, 80 grams avocado, 120 grams feta cheese, 100 grams almonds, prepared seasoning and mix it well.
9. Serve.

Creamy Avocado Pasta Salad

Servings - 2 - 3

INGREDIENTS

Spinach - 50 grams
Avocado - 80 grams
Garlic cloves - 5
Lemon juice - 1 teaspoon
Olive oil - 35 milliliters
White wine vinegar - 1 tablespoon
Lemon juice - 1 tablespoon
Garlic powder - 1/4 teaspoon
Parmesan cheese - 1 tablespoon
Dried parsley - 1/4 teaspoon
Dried basil - 1/4 teaspoon
Dried oregano - 1/4 teaspoon
Chilli flakes - 1/4 teaspoon
Black pepper - 1/4 teaspoon
Honey - 1 teaspoon
Water - 500 milliliters
Green peas - 80 grams
Sweet corn - 80 grams
Boiled pasta - 160 grams
Avocado - 100 grams
Tomato - 120 grams
Onions - 50 grams

PREPARATION
1. In a blender, add 50 grams spinach, 80 grams avocado, 5 garlic cloves, 1 teaspoon lemon juice and blend it into a puree.
2. In a bowl, add 35 milliliters olive oil, 1 tablespoon white wine vinegar, 1 tablespoon lemon juice, 1/4 teaspoon garlic powder, 1 tablespoon parmesan cheese, 1/4 teaspoon dried parsley, 1/4 teaspoon dried basil, 1/4 teaspoon dried oregano, 1/4 teaspoon chilli flakes, 1/4 teaspoon black pepper, 1 teaspoon honey and mix it well.
3. Take a deep pan, add 500 milliliters water, 80 grams green peas, 80 grams sweet corn and stir well.
4. Bring it to a boil.
5. Boil for 5 - 7 minutes on medium heat.
6. Remove it from heat and drain the veggies.
7. In a mixing bowl, add 160 grams boiled pasta, blended mixture, 100 grams avocado, boiled veggies, 120 grams tomato, 50 grams onions, prepared seasoning and mix it well.
8. Serve.

Spicy Roasted Chickpea Salad

Servings - 2 - 3

INGREDIENTS

Boiled chickpeas - 300 grams
Salt - 1 teaspoon
Black pepper - 1/4 teaspoon
Red chili - 1/2 teaspoon
Garlic powder - 1/2 teaspoon
Coriander powder - 1/2 teaspoon
Cumin powder - 1/2 teaspoon
Chaat masala - 1 teaspoon
Oil
Lettuce - 170 grams
Avocado - 90 grams
Cherry tomato - 70 grams
Onions - 60 grams
Feta cheese - 80 grams
Boiled eggs - 5
Olives - 10 grams
Olive oil - 2 teaspoons

PREPARATION
1. In a mixing bowl, add 300 grams boiled chickpeas, 1 teaspoon salt, 1/4 teaspoon black pepper, 1/2 teaspoon red chili, 1/2 teaspoon garlic powder, 1/ 2teaspoon coriander powder, 1/2 teaspoon cumin powder, 1 teaspoon chaat masala and mix it well.
2. Transfer this into a baking tray.
3. Add some oil on top of it.
4. Preheat the oven to 400°F/200°C. Bake for 25 minutes
5. Remove it from oven and keep aside.
6. In a mixing bowl, add 170 grams lettuce, 90 grams avocado, 70 grams cherry tomato, 60 grams onions, 80 grams feta cheese, 5 boiled eggs, 10 grams olives, baked chickpeas, 2 teaspoons olive oil and mix it well.
7. Serve.
