Mango Jam Biscuits

Mangoes - 600 grams

Powdered sugar - 100 grams

Lemon juice - 1 tablespoon

All purpose flour - 200 grams

Baking powder - 1 teaspoon

Salt - 1/4 teaspoon

Unsalted butter - 100 grams

Powdered sugar - 90 grams

Mango essence - 1 teaspoon

Milk - 70 milliliters

 

 

PREPARATION

  1. In a blender, add 600 grams mangoes and blend it to a smooth puree.
  2. Now transfer the puree in a pan, stir and cook on medium heat.
  3. Then, add 100 grams powdered sugar and mix well.
  4. Allow it to cook on low heat.
  5. Now, add 1 tablespoon lemon juice. Mix well.
  6. Remove the pan from heat.
  7. Allow it to cool for 30 minutes.
  8. In a mixing bowl, add 200 grams all purpose flour, 1 teaspoon baking powder and  1/4 teaspoon salt.
  9. Mix well and keep aside.
  10. In another bowl, add 100 grams unsalted butter and whisk it for 2-3 minutes.
  11. Now, add 90 grams powdered sugar, and whisk again.
  12. Then add 1 teaspoon mango essence , mix once and add prepared flour mixture and whisk for 2-3 minutes.
  13. Now, add 70 milliliters milk and whisk all ingredients together .
  14. Now, knead it to make a smooth dough.
  15. Refrigerate for 20 - 25 minutes.
  16. Take a small ball from the prepared dough and flatten  it with the help of rolling pin.
  17. Now, take a cookie cutter and cut it from the flatten dough.
  18. Cut out a small circle from the centre of the cookies. ( see video )
  19. Transfer the cookies/ biscuits  in the baking tray.
  20. Preheat the oven at 350º F / 180º C.
  21. Bake for 10- 12 minutes .
  22. Take out the prepared biscuit  and fill the prepared mango jam over it .
  23. Cover it with the other biscuit .
  24. Serve.
