Mint Chocolate Cookie Trifle

INGREDIENTS
Sugar - 50 grams
Cocoa powder - 2 tablespoons
Salt - 1/8 teaspoon
Corn flour - 1 tablespoon
Milk - 500 milliliters
Butter - 1 tablespoon
Vanilla extract - 1 teaspoon
Whipping cream - 120 grams
Powdered sugar - 2 teaspoons
Mint extract - 1/2 teaspoon
Organic food color - 1/4 teaspoon
Butter - 100 grams
Powdered brown sugar - 100 grams
Mint extract - 1 teaspoon
Milk - 60 milliliters
All purpose flour - 200 grams
Salt -1/4 teaspoon
Baking powder - 1/4 teaspoon
Cocoa powder - 70 grams
( For assembling)
Crushed cookies
Prepared whipping cream
Prepared chocolate pudding
Fresh mint
PREPARATION
- In a pan, add 50 grams sugar, 2 tablespoons cocoa powder, 1/8 teaspoon salt, 1 tablespoon corn flour . Mix well.
- Add 500 milliliters milk and whisk well.
- After this, add 1 tablespoon butter, 1 teaspoon vanilla extract. mix well.
- Remove the pan from heat, and let it cool for 10 minutes.
- Refrigerate for 1 hour.
- In a bowl, take 120 grams whipping cream, whisk it properly until soft peaks form.
- Now add, 2 teaspoons powdered sugar and whisk again.
- Then, add 1/2 teaspoon mint extract and organic food color .
- Whisk it properly and keep aside.
- In a bowl , add 100 grams butter, whisk it properly, then add 2 teaspoons powdered brown sugar. Mix well.
- Now, add 1 teaspoon mint extract, 60 milliliters milk and mix it again.
- Add 200 grams all purpose flour, 1/4 teaspoon salt, 1/4 teaspoon baking powder, 70 grams cocoa powder and whisk it well.
- Combine all the ingredients with the help of spatula.
- Refrigerate for 20 minutes.
- Now take ball from dough and flatten it with the help of rolling pin.
- Cut out a circle from it using a cookie cuter.
- Transfer it in a baking tray.
- Now, preheat the oven at 340º C/170º F and bake for 10 - 12 minutes.
- Take out the cookies and let it cool for 10 - 15 minutes, and crush them.
- For assembling , take a glass ,add crushed cookies , prepared whipping cream and prepared chocolate pudding and repeat the process once. (See video )
- Garnish with fresh mint.
- Serve immediately.
