Suji Malpua

INGREDIENTS
Semolina - 200 grams
Sugar - 30 grams
Milk powder - 30 grams
Fennel seeds - 1/2 teaspoon
Baking powder - 1/4 teaspoon
Fresh cream - 30 grams
Milk - 250 grams
Sugar - 200 grams
Water - 150 milliliters
Cardamom - 1/8 teaspoon
Lemon juice - 1/4 teaspoon
Ghee - for frying
Pistachio - for garnish
PREPARATION
- In a mixing bowl, add 200 grams semolina, 30 grams powdered sugar, 30 grams milk powder, 1/2 teaspoon fennel seeds and 1/4 teaspoon baking powder and mix well.
- Now add 30 grams fresh cream and whisk again.
- Add 250 milliliters milk, mix well.
- Rest the batter for 25 - 30 minutes.
- In a pan, add 200 grams sugar, 150 milliliters water and cook until sugar dissolves completely.
- Now, add 1/8 teaspoon cardamom powder, 1/4 teaspoon lemon juice , mix and cook till one string forms.
- Remove the pan from heat and keep aside.
- Heat sufficient ghee in a wok.
- Now, take some batter in a spoon and pour it carefully in a heated ghee.
- Cook till golden brown from both sides.
- Now soak prepared malpua in sugar syrup for 2-3 minutes.
- Garnish with prepared sugar syrup and pistachio’s.
- Serve hot.
