Suji Malpua

INGREDIENTS

Semolina - 200 grams

Sugar - 30 grams

Milk powder - 30 grams

Fennel seeds - 1/2 teaspoon

Baking powder - 1/4 teaspoon

Fresh cream - 30 grams

Milk - 250 grams

Sugar -  200 grams

Water - 150 milliliters

Cardamom - 1/8 teaspoon

Lemon juice - 1/4 teaspoon

Ghee - for frying

Pistachio - for garnish

 

PREPARATION

  1. In a mixing bowl, add 200 grams semolina, 30 grams powdered sugar, 30 grams milk powder, 1/2 teaspoon fennel seeds and 1/4 teaspoon baking powder and mix well.
  2. Now add 30 grams fresh cream and whisk again.
  3. Add 250 milliliters milk, mix well.
  4. Rest the batter for 25 - 30 minutes.
  5. In a pan, add 200 grams sugar, 150 milliliters water and cook until sugar dissolves completely.
  6. Now, add 1/8 teaspoon cardamom powder, 1/4 teaspoon lemon juice , mix and cook till one string forms.
  7. Remove the pan from heat and keep aside.
  8. Heat sufficient ghee in a wok.
  9. Now, take some batter in a spoon and pour it carefully in a heated ghee.
  10. Cook till golden brown from both sides.
  11. Now soak prepared malpua in sugar syrup for 2-3 minutes.
  12. Garnish with prepared sugar syrup and pistachio’s.
  13. Serve hot.
