Tandoori Chicken Momos Roll

INGREDIENTS
(For Dough)
All purpose flour - 300 grams
Salt - 1 teaspoon
Oil - 2 teaspoons
Water - 180 milliliters
(For Tandoori Chicken Momos)
Boneless chicken - 400 grams
Fresh cream - 2 tablespoons
Tandoori masala - 1 teaspoon
Garam masala - 1/2 teaspoon
Cumin powder - 1/2 teaspoon
Red chili - 1/2 teaspoon
Chaat masala - 1/2 teaspoon
Salt - 1 teaspoon
Lemon juice - 1 teaspoon
Charcoal
Desi ghee - 1 teaspoon
Oil - 2 teaspoons
All purpose flour - for dusting
Tandoori masala - 1 teaspoon
Red chilli sauce - 2 tablespoons
(For Mayonnaise Sauce)
Mayonnaise - 50 grams
Ketchup - 2 tablespoons
(For Tandoori Chicken Momo Roll)
Oil - for brushing
Prepared chapati
Green chutney - to taste
Lettuce - to taste
Prepared momos
Onion slices - to taste
Prepared mayonnaise sauce - to taste
PREPARATION
(For Dough)
- In a mixing bowl, add all the ingredients and mix it well.
- Knead it into a smooth soft dough.
- Rest the dough for 1 hour.
(For Tandoori Chicken Momos)
- In a mixing bowl, add 400 grams boneless chicken, 2 tablespoons fresh cream, 1 teaspoon tandoori masala, 1/2 teaspoon garam masala, 1/2 teaspoon cumin powder, 1/2 teaspoon red chili, 1/2 teaspoon chaat masala, 1 teaspoon salt, 1 teaspoon lemon juice and mix it well.
- Place a aluminium foil bowl in it.
- Place a boring charcoal, add 1 teaspoon desi ghee and cover it with lid.
- Smoke for 4 - 5 minutes and then marinate for 1 hour.
- Heat 2 teaspoon oil in a pan, add the marinated chicken in it and mix it well.
- Cook for 8 - 10 minutes on medium heat or until the chicken is cooked properly.
- Remove it from heat and keep aside.
- Take a ball from dough and dust it with flour.
- Flatten it with the help of a rolling pin.
- Add the prepared stuffing on it and shape it into a momo. (See Video)
- Place it in a steamer and steam for about 10 - 15 minutes.
- Remove it from steamer and transfer this into a bowl.
- Add 1 teaspoon tandoori masala, 2 tablespoons red chilli sauce and mix it well.
- Keep aside.
(For Mayonnaise Sauce)
- In a bowl, add 50 grams mayonnaise, 2 tablespoons ketchup and mix it well.
- Keep aside.
(For Tandoori Chicken Momo Roll)
- Take a ball from dough and dust it with flour.
- Flatten it with the help of a rolling pin.
- Place it on a hot tawa and cook on moderate heat for 2 - 3 minutes.
- Flip it gently.
- Brush it with oil.
- Flip it to the other side.
- Brush the other side too.
- Cook until it turns golden brown in color from both sides.
- Remove it from heat and transfer this onto a board.
- Add some green chutney on it and spread it evenly.
- Add some lettuce on it.
- Top with prepared momos.
- Garnish with onion slices.
- Drizzle some prepared mayonnaise sauce on it.
- Fold the roll tightly.
- Cover it with aluminium foil.
- Serve.
