Tandoori Chicken Momos Roll

INGREDIENTS
(For Dough)

All purpose flour - 300 grams

Salt - 1 teaspoon

Oil - 2 teaspoons

Water - 180 milliliters

 

(For Tandoori Chicken Momos)

Boneless chicken - 400 grams

Fresh cream - 2 tablespoons

Tandoori masala - 1 teaspoon

Garam masala - 1/2 teaspoon

Cumin powder - 1/2 teaspoon

Red chili - 1/2 teaspoon

Chaat masala - 1/2 teaspoon

Salt - 1 teaspoon

Lemon juice - 1 teaspoon

Charcoal

Desi ghee - 1 teaspoon

Oil - 2 teaspoons

All purpose flour - for dusting

Tandoori masala - 1 teaspoon

Red chilli sauce - 2 tablespoons

 

(For Mayonnaise Sauce)

Mayonnaise - 50 grams

Ketchup - 2 tablespoons

 

(For Tandoori Chicken Momo Roll)

Oil - for brushing

Prepared chapati

Green chutney - to taste

Lettuce - to taste

Prepared momos

Onion slices - to taste

Prepared mayonnaise sauce - to taste

 

PREPARATION

(For Dough)

  1. In a mixing bowl, add all the ingredients and mix it well.
  2. Knead it into a smooth soft dough.
  3. Rest the dough for 1 hour.

 

(For Tandoori Chicken Momos)

  1. In a mixing bowl, add 400 grams boneless chicken, 2 tablespoons fresh cream, 1 teaspoon tandoori masala, 1/2 teaspoon garam masala, 1/2 teaspoon cumin powder, 1/2 teaspoon red chili, 1/2 teaspoon chaat masala, 1 teaspoon salt, 1 teaspoon lemon juice and mix it well.
  2. Place a aluminium foil bowl in it.
  3. Place a boring charcoal, add 1 teaspoon desi ghee and cover it with lid.
  4. Smoke for 4 - 5 minutes and then marinate for 1 hour.
  5. Heat 2 teaspoon oil in a pan, add the marinated chicken in it and mix it well.
  6. Cook for 8 - 10 minutes on medium heat or until the chicken is cooked properly.
  7. Remove it from heat and keep aside.
  8. Take a ball from dough and dust it with flour.
  9. Flatten it with the help of a rolling pin.
  10. Add the prepared stuffing on it and shape it into a momo. (See Video)
  11. Place it in a steamer and steam for about 10 - 15 minutes.
  12. Remove it from steamer and transfer this into a bowl.
  13. Add 1 teaspoon tandoori masala, 2 tablespoons red chilli sauce and mix it well.
  14. Keep aside.

 

(For Mayonnaise Sauce)

  1. In a bowl, add 50 grams mayonnaise, 2 tablespoons ketchup and mix it well.
  2. Keep aside.

 

(For Tandoori Chicken Momo Roll)

  1. Take a ball from dough and dust it with flour.
  2. Flatten it with the help of a rolling pin.
  3. Place it on a hot tawa and cook on moderate heat for 2 - 3 minutes.
  4. Flip it gently.
  5. Brush it with oil.
  6. Flip it to the other side.
  7. Brush the other side too.
  8. Cook until it turns golden brown in color from both sides.
  9. Remove it from heat and transfer this onto a board.
  10. Add some green chutney on it and spread it evenly.
  11. Add some lettuce on it.
  12. Top with prepared momos.
  13. Garnish with onion slices.
  14. Drizzle some prepared mayonnaise sauce on it.
  15. Fold the roll tightly.
  16. Cover it with aluminium foil.
  17. Serve.
