Bhindi Peanut Masala

INGREDIENTS
Peanuts - 35 grams
Okra - 180 grams
Oil - 2 tablespoons, divided
Cumin - 1/2 teaspoon
Curry leaves - 12 - 15
Dry red chili - 2
Red chili - 1/2 teaspoon
Turmeric - 1/4 teaspoon
Salt - 1/2 teaspoon
Dry mango powder - 1/2 teaspoon
PREPARATION
- Take a pan, add 35 grams peanuts and roast for 3 - 5 minutes on medium heat or until it turns golden brown in color.
- Remove it from heat and transfer this into a mortar.
- Crush them with the help of a pestle. Keep aside.
- Take 180 grams okra and cut its sides.
- Cut it from center and slice okra lengthwise. (See Video)
- Heat 1 tablespoon oil in a pan, add the okra in it and mix it well.
- Cook for 8 - 10 minutes on medium heat.
- Remove it from heat and keep aside.
- Heat 1 tablespoon oil in a another pan, add 1/2 teaspoon cumin, 12 - 15 curry leaves, 2 dry red chili and stir for 1 - 2 minutes.
- Then, add the semi cooked okra in it and mix it well.
- Cook for 5 - 7 minutes on medium heat.
- Add 1/2 teaspoon red chili, 1/4 teaspoon turmeric, 1/2 teaspoon salt, 1/2 teaspoon dry mango powder and mix it well.
- Now, add the crushed peanuts in it and mix it again.
- Cook for another 3 - 5 minutes on medium heat.
- Remove it from heat.
- Serve hot.
