Kurkure Karela Sabzi

INGREDIENTS
Bitter gourd - 550 grams
Water - 1.5 liters
Oil - for frying
Mustard oil - 1 tablespoon
Fennel seeds - 1/2 teaspoon
Onion - 80 grams
Salt - 1/2 teaspoon
Red chili - 1/2 teaspoon
Turmeric - 1/4 teaspoon
Coriander powder - 1/2 teaspoon
Dry mango powder - 1 teaspoon
PREPARATION
- In a mixing bowl, add 550 grams bitter gourd, 1.5 liters water and wash them thoroughly.
- Now, dry bitter gourd with the help of a cloth.
- Remove the seeds if any and cut it into thin stripes.
- Heat oil in a wok, add bitter gourd strips and fry till golden brown.
- Heat 1 tablespoon mustard oil in a pan, add 1/2 teaspoon fennel seeds.
- Cook fennel seeds till sizzled.
- Now, add 80 grams onion, stir and cook till golden brown.
- Then, add fried bitter gourd and mix well.
- Add, 1/2 teaspoon salt, 1/2 teaspoon red chili, 1/4 teaspoon turmeric, 1/2 teaspoon coriander powder and 1 teaspoon dry mango powder.
- Mix all the ingredients well.
- Cook for 2-3 minutes on moderate heat.
- Add kurkure karela sabji in a serving dish.
- Serve hot with chapatti.
