Kurkure Karela Sabzi

INGREDIENTS

Bitter gourd - 550 grams

Water - 1.5 liters

Oil - for frying

Mustard oil - 1 tablespoon

Fennel seeds - 1/2 teaspoon

Onion - 80 grams

Salt - 1/2 teaspoon

Red chili - 1/2 teaspoon

Turmeric - 1/4 teaspoon

Coriander powder - 1/2 teaspoon

Dry mango powder - 1 teaspoon

 

PREPARATION

  1. In a mixing bowl, add 550 grams bitter gourd, 1.5 liters water and wash them thoroughly.
  2. Now, dry bitter gourd with the help of a cloth.
  3. Remove the seeds if any and cut it into thin stripes.
  4. Heat oil in a wok, add bitter gourd strips and fry till golden brown.
  5. Heat 1 tablespoon mustard oil in a pan, add 1/2 teaspoon fennel seeds.
  6. Cook fennel seeds till sizzled.
  7. Now, add 80 grams onion, stir and cook till golden brown.
  8. Then, add fried bitter gourd and mix well.
  9. Add, 1/2 teaspoon salt, 1/2 teaspoon red chili, 1/4 teaspoon turmeric, 1/2 teaspoon coriander powder and 1 teaspoon dry mango powder.
  10. Mix all the ingredients well.
  11. Cook for 2-3 minutes on moderate heat.
  12. Add kurkure karela sabji in a serving dish.
  13. Serve hot with chapatti.
